Book club was awesomely delicious last week thanks to Anna's lettuce wraps. I know a lot of you have been begging for the recipe, so here it is! You will need:
3 tablespoons olive oil
1 cup water chestnuts
2 boneless chicken breasts
2/3 cup diced mushrooms
3 tablespoons chopped onion
1 teaspoon crushed garlic
1 head iceberg lettuce
Stir Fry Sauce
2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon rice vinegar
Lettuce Wrap Sauce
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/8 teaspoon sesame oil
Tie on your apron. Make Lettuce Wrap Sauce and set in fridge to chill. Make Stir Fry Sauce and set aside. In a large skillet or wok heat olive oil on high. Saute chicken for 4-5 minutes on each side. Remove chicken and mince after it has cooled. Add all chopped vegetables and garlic to hot skillet and stir fry for a few minutes. Then add chicken and stir fry sauce. Saute for two more minutes, then serve on lettuce leaves with Lettuce Wrap Sauce. Happy eating!

I was bummed to not be able to make it to book club this month. We had already talked about the book. But, I really did enjoy it. And I can not wait to see the movie. Hopefully life will settle down a little and I will be able to make it.
Thanks for posting that recipe. I love PF changs lettuce wraps. And these past few months I have been cooking like crazy. So hopefully they turn out yummy.

OK ladies, I have to tell you. I made the lettuce wraps this week and they were a HUGE hit! We had leftover chicken & veggies, so the next night I cooked some rice and put the chicken mixture over it. So. Darn. Good.
