Chicken Piquante

This is another of my mom's famous recipes. Not only is Chicken Piquante really simple and flavorful, it is also very healthy too. I love to serve it with a side of Spanish rice and a wedge of fresh lime. Happy eating!

You will need:

3-4 boneless, skinless chicken breasts
1/2 cup medium or hot salsa
1/4 cup Dijon mustard
2 tablespoons fresh lime juice (more if desired)
2 tablespoons butter
plain yogurt
fresh cilantro

Tie on your apron. In a medium bowl, combine salsa, mustard and lime juice. Marinate chicken breasts in mixture for 30 minutes. In a large skillet melt butter and add chicken and all of the marinade. Cook chicken on medium-high heat (both sides) for about 20 minutes. Serve chicken with marinade, a dollop of plain yogurt, and chopped fresh cilantro (I promise the yogurt is delicious with the chicken). Salt and pepper to taste. Serves 2-3.
