chocolate peppermint cookies

I took these colorful cookies around to my neighbors this week, and they loved them! I hope you enjoy these delicious holiday treats as much as I did. Merry Christmas!
You will need:

2 boxes Devil's Food cake mix
4 eggs
1 cup shortening
1 cup semi-sweet chocolate chips
1 package vanilla flavored Almond Bark (substitute white chocolate if you wish)
1 cup finely ground or crushed peppermint

Tie on your apron. In a medium bowl combine cake mix, eggs and shortening. Mix together by hand until dough is no longer sticky. Add chocolate chips and mix into dough. Make small balls and place on an ungreased cookie sheet. Bake at 350 degrees for approximately 9 minutes. Cookies must be cool before dipping in melted vanilla.

In a pan or crock pot melt Almond Bark. Dip one half of cooled cookie into Almond Bark and set on wax paper. Sprinkle liberally with ground peppermint and let vanilla cool. Makes 3-4 dozen cookies. Happy eating!
