summer soup

You will need:

2 small yellow squash (fresh from the garden)
1 medium-large zucchini (fresh from the garden)
1 clove crushed garlic or garlic powder
2 cups water or chicken stock
1/4 cup butter

Tie on your apron! In a medium saucepan melt butter over medium heat and sautee garlic (add onion if you wish). Add water or chicken stock and bring to a boil. Using a cheese grater, shred vegetables and add to broth. Simmer for 10 minutes. Serve with a slice of your favorite bread. Makes 2-3 servings. Salt and pepper to taste.
